Apple Fritter Muffins

 ½ cup apple sauce
 ½ cup almond milk
 2 scoops vanilla protein powder
 2 eggs
 ½ cup low-carb pancake mix
 2 tbsp. sugar free maple syrup
 1 tsp. cinnamon
 1 tsp. vanilla extract
 1 small apple, diced

Mix all ingredients together. Spoon into a mini muffin tin that has been sprayed with non-stick cooking spray.

Bake at 350F for 13 to 17 minutes or until a toothpick can be inserted to a muffin and come out clean.
