Combine soy, water, garlic, ginger and pepper in a bowl and set the the side.
Add 1/4 of your meat and veggies to the 4 skewers, alternating each ingredient. Pour the marinade over the skewers (reserve about 1/3). Allow them to sit in the marinade at least an hour.
Grill, air fry or broil them until your meat reaches your desired doneness. Drizzle remaining sauce and sesame seeds on them and serve.
