Cook your cauliflower rice according to the directions on the package.
Mix your rice, corn, chicken, peppers, onions and sauce.
Spray a 9x13 pan with non-stick cooking spray. Add your mixture and top with cheese.
Bake at 350F for 30 minutes. Garnish with parsley.
