Blackened Chicken and Avocado Salad

Yields4 Servings

 2 boneless chicken breasts
 1 tbsp blackening seasoning
 1 tbsp olive oil
 ¼ tsp salt
 ¼ tsp black pepper
 4 cups romaine lettuce
 1 small red onion, chopped
 1 avocado, diced
 1 mini cucumber, diced
 1 cup baby tomatoes
 ¼ cup sliced scallions
 4 servings of light cilantro lime dressing (see recipe instructions to make your own)

Mix the blackening seasoning, salt and pepper. Coat the chicken well in the mixture.

Seer it on medium high heat until the chicken is cooked through.

Add your vegetables to a plate. Top with chicken and dressing and enjoy.

If you do not find light cilantro lime dressing you can mix Greek yogurt, cilantro and lime juice.
