BLT Cauliflower Pizza

Yields4 Servings

 4 cups riced cauliflower
 1 egg
 ¾ cup shredded mozzarella cheese
 ¼ cup grated Parmesan cheese
 1 ½ tbsp coconut flour
 ½ tsp garlic powder
 ½ tsp oregano
  cup light ranch dressing
 ½ cup shredded lettuce
 ¼ cup cherry tomatoes
 5 slices of turkey bacon, cooked and diced
 2 tbsp green onion, sliced
 ½ avocado, diced

Place the cauliflower rice in a microwave safe bowl and sprinkle with pinch of salt, mix and cover. Microwave for 5 minutes and let cool.

Squeeze all the liquid out with a kitchen towel. Add the egg, mozzarella, Parmesan cheese, coconut flour, garlic powder, salt and dried oregano.

Form 4 round pizzas on a parchment lined baking tray. Bake in preheated oven for 20-25 minutes.

Top each cauliflower base with dressing, lettuce, tomatoes, bacon, avocado and green onion.
