Beat eggs 1 at a time, and cook in a skillet like you are going to make an omelette, but do not fill. Stack them on a plate.
Cook sausage, onions and peppers
Fill each egg with 1/8 of the sausage mixture and roll up.
Place them in a baking dish, and cover with salsa and cheese.
Bake on 350 for 12 minutes
Garnish with sour cream
