Cut your broccoli into very small pieces. Dice your onions. Season both with salt and pepper. Cook them in the microwave for 3 minutes to soften them.
Spray a muffin tin with non-stick cooking spray. Add the veggies and a bit of cheddar cheese to each well.
Mix your eggs well and pour them over the mixture.
Bake at 350F for 12 to 15 minutes or until the eggs are cooked through.
