Sauté quickly in a hot pan, cooking it most of the way.
Mix with tomatoes, onion, vinegar, oregano, salt and pepper and place into a baking dish. Add fresh mozzarella balls or shredded to the top.
Bake on 375F for 20 minutes or until cheese has melted and onions are soft.
Drizzle with additional vinegar if desired.
