Burrito Zoodles

 1 medium onion, chopped
 2 cloves garlic, minced
 1 lb 1 lb. ground beef
 1 packet of taco seasoning
 1 (15-oz.) can black beans, drained and rinsed
 1 can cherry tomatoes, halved
 1 can sweet corn
 1 can red enchilada sauce
 3 zucchinis, cut into zoodles

In a large skillet over medium heat, heat oil.

Add onion and cook until soft, about 5 minutes, then add garlic and cook until fragrant, 1 minute more.

Add ground beef, breaking up meat with a wooden spoon.

Cook until beef is no longer pink, about 6 minutes. Drain fat.

Stir in taco season, then season with salt and pepper.

Stir in black beans, cherry tomatoes, corn, enchilada sauce.

Cook about 4 to 5 minutes.

Add zoodles and toss to coat in sauce, cooking just until warmed through.
