Cajun Salmon Over Dirty Cauliflower Rice

Yields4 Servings

 4 salmon filets (4 oz. each)
 Juice of 1 lime
 2 tsp Cajun seasoning
 1 small red onion, finely diced
 2 tbsp olive oil
 1 tsp paprika
 1 tsp cumin
 ½ tsp salt
 2 cups frozen cauliflower rice
 ½ cup sliced green onions
 2 tbsp chopped cilantro

Coat your salmon in the lime juice and cajun seasoning.

Prepare cauliflower rice according to the directions on the package. Cook the onions with olive oil for a minute and add paprika, cumin, chili flakes and some salt. Cook until the cauliflower is tender. Mix in the green onions and cilantro.

Remove the salmon fillets from the marinade and shake off slightly. Place in a hot skillet and cook for 3 minutes on each side, until blackened and crispy.

Serve over the cauliflower rice.
