Cut each chicken breast in half to make 4 long thin pieces.
Marinate them in olive oil, salt and pepper.
Grill or sear each piece.
Mix your tomatoes, cheese, vinaigrette and basil.
Pile ¼ of the mixture onto each piece.
Bake at 350F for 10 minutes or until the cheese is melted.
