 12 eggs
 ½ cup baby tomatoes, sliced
 ½ cup baby mozzarella balls
 ¼ cup sliced basil
 2 tsp balsamic vinegar
 ½ tsp salt
 ½ tsp pepper

Beat your eggs well with vinegar, salt and pepper. Spray a non-stick muffin pan with cooking spray.

Add tomatoes, mozzarella and basil to each.

Bake at 350F for 12 to 15 minutes or until the eggs are well set.
