Carrot Cake in a Mug

 ¼ cup shredded carrots
 1 scoop vanilla protein powder
 1 egg
 1 tbsp almond milk
 1 tsp sugar free vanilla instant pudding mix
 1 tbsp oat flour
 1 tsp vanilla extract
 ½ tsp cinnamon
 pinch of salt

In a small bowl, or even inside the mug, add all the ingredients. Stir or whisk until the batter is smooth. Fold in the shredded carrots.

Microwave the mug cake for 1 to 1½ minutes. Begin checking at 1 minute though. The cake should look set but be careful not to over-microwave. Garnish with some sugar free cool whip and a chopped walnut if you would like.
