Add your bell peppers, onions, garlic, olives (brine and all), broth, paste and seasoning to a pan and allow it to simmer.
Add chicken thighs and slowly simmer until they are soft and tender. You could also do this in a crock pot.
Mix some of your green onions and all of your cilantro into your cauliflower rice. Add your filling on top.
Garnish with remaining green onions.
