Preheat oven to 400F. Cook your cauliflower rice and strain or squeeze out all liquid.
Microwave your cauli rice. eggs, seasoning and 1/2 of your cheese for 45 seconds at a time.
Stir well each time until it forms a ball or dough.
Press it out onto a lined cookie sheet in small rounds. Bake for 20 minutes and flip over.
Top with sauce, cheese and pepperoni. Bake for 5 to 7 minutes more until the cheese is melted and golden.
