Divide your meat into 4 small balls. Season with salt and pepper.
Add them to a pan. Place the tortilla on top of them and smash until it is very flat and the meat has covered the width of the tortilla.
Allow to cook until meat is done. Flip over and crisp up the outer side of the tortilla.
Mix your lettuce, dressing and cheese and add to the taco.
