Chicken Cordon Bleu Casserole

 1 lb cooked and shredded chicken
 8 slices of thick cut ham
 12 oz sliced swiss cheese
 1 cup chicken stock
 2 tbsp dijon mustard
 1 cup almond milk
 2 tsp chopped parsley
 3 tbsp parmesan cheese
 1 tbsp flour
 1 tbsp olive oil
 6 eggs
 salt
 pepper

Begin by adding your flour and olive oil to a pan.

Cook it together forming a roux.

Add your almond milk, mustard, salt, pepper, parmesan and parsley.

Stir until it thickens and becomes creamy.

Get a round 8 inch skillet hot.

Beat one egg at a time and cook it in the skillet like you would an omelets, creating a round shape.

Use a pie plate and layer in your casserole. Egg, ham, cheese, chicken and then sauce.

Repeat until ingredients are gone. Bake at 350F for 40 minutes.
