 1 rotisserie chicken
 1 bag of frozen cauliflower rice
 1 red bell pepper, diced
 1 onion, diced
 1 medium zucchini, diced
 1 small can of enchilada sauce
 1 can of black beans, rinsed and drained
 cilantro for garnish

PullĀ all the meat off of the precooked chicken.

Add it to the skillet.

Add all other ingredients except cilantro and allow to cook until your veggies are done.

Garnish with cilantro.
