Dice your chicken into small pieces. Add them to a pan with bell peppers, and onions. Cook until almost done.
Add taco seasoning. Allow to cook until the chicken is well coated.
Stir in cauliflower rice, cream cheese and enchilada sauce. Cook just until cauliflower is tender.
Add cheese to the top and allow it to melt. Garnish with green onions.
