Beat your eggs with a small amount of salt. Pour them into a warm pan. Allow to cook until the eggs are almost set. Flip the eggs over, being careful to keep it in one piece.
Add your chicken, green chilis, cheese and some cilantro. Save a little to garnish with.
Fold the omelet over. Garnish with remaining cilantro and chilis.
