Drain all of the liquid from your chicken. Add eggs and 1/2 of the shredded cheese. Mix in the Italian seasoning, garlic and onion powder.
Cook in a waffle iron until golden brown, mine took about 7 minutes.
Top each chaffle with the sauce and more cheese. Broil in the oven just until golden brown. Garnish with the parsley.
Makes 6 chaffles and you get 2 per serving.
