Chicken Ricotta Meatballs

 1 lb. lean ground chicken
 8 oz. low-fat ricotta cheese
 2 eggs
 1 cup thawed frozen spinach
 ½ cup panko breadcrumbs
 1 tbsp. minced garlic
 salt and pepper
 1 cup no sugar added marinara sauce
 1 oz. grated parmesan cheese

Mix your chicken, ricotta, eggs, spinach (make sure the water is squeezed out), panko, garlic, salt and pepper together.

Form into 16 small meatballs.

Brown each one in a pan or bake them at 350F for 25 minutes. Make sure they are cooked through. Serve with sauce and a garnish of parmesan cheese.
