Chicken Scallopini

 4 thinly sliced chicken breasts
 ¼ cup flour
 1 tbsp. extra virgin olive oil
 8 oz. sliced mushrooms
 ¼ cup sliced white onions
 3 cloves of minced garlic
 1 tbsp. chopped parlsey
 ½ cup white wine
 ¾ cup chicken stock
 1 tbsp. butter
 salt and pepper to taste

Coat both sides of the chicken with flour. Add the chicken to a hot pan coated in oil and cook for 2 minutes per side.

Remove the chicken and add the oil and mushrooms to the pan. Season with salt and pepper. Add the mushrooms, stir well, and cook for 2 minutes.

Stir in the sliced onions, parsley, and garlic. Cook for 2 minutes.

Increase the heat to medium and reduce until the sauce is thick. Add the chicken stock and continue to cook, stirring well, until boiling.

Reduce heat to medium, add the chicken scaloppini, and cook for 2 minutes. Increase heat to medium-high. Stir in the butter until completely melted into the sauce.

Salt and pepper to taste. Serve over any noodle substitute that you enjoy.
