Preheat your oven to 250F. Cover a cookie sheet with parchment paper.
Beat your egg whites until they are stiff. Add your sweetener one tbsp at a time.
Add vanilla, pecans and chocolate chips and gently fold them in. Scoop onto the parchment paper with a small cookie scoop.
Bake for 35 minutes and then turn oven off and leave the cookies in there another 30 minutes. Allow to cool before moving.
