Preheat oven to 350℉. Spray a loaf pans with non- stick cooking spray and line it with parchment paper.
Mix your yogurt and cornstarch. eggs until the batter is silky smooth. Add your sweetener, salt and vanilla.
Pour this batter into your pan. Thinly slice your apples and toss with remaining Splenda and cinnamon. Add the apples to the top of the cake.
Bake for 50 to 60 minutes. top of the cake. Allow to set up in the fridge.
