Cranberry Orange Bread Pudding

 2 slices low or no carb bread (I used Aldi "No Carb" Bread
 1 ½ cups almond milk
 ¼ cup greek yogurt
 ½ cup Splenda
 4 Eggs
 1 tsp Vanilla Extract
 ¼ cup dried cranberries
 Zest and juice of 1 orange
 2 scoops vanilla protein powder
 ½ tsp cinnamon
 1 oz shivered almonds

Preheat your oven to 350F.

Spray 6 individual baking dishes with non-stick cooking spray.

Dice your bread into cubes.

Mix your milk, yogurt, cinnamon, splenda, eggs, vanilla, protein and orange juice to make a custard.

Stir in your cranberries, almonds and orange zest.

Allow your bread to soak up the custard.

Fill the baking dishes, making sure to use all the liquid.

Bake for 30 to 40 minutes until the custard is set.
