 1 rice paper wrapper
 2 eggs
 1 slice of tomato
 1 leaf of lettuce
 1 tsp. of your favorite mustard
 ¼ avocado, sliced very thin

Beat your eggs and pour them into a non-stick skillet that has been coated with cooking spray.

Lay your rice paper wrapper on top of the eggs. Allow to cook until the eggs are full set.

Flip over and allow the rice wrapper to crisp up. Add the remaining ingredients and fold.
