Crunchy Asparagus Fries

 1 lb asparagus spears, fresh only
 1 cup panko breadcrumbs
 2 eggs
 ¼ cup water
 ¼ cup coconut flour
 salt
 pepper

Clean your asparagus and trim the woody end off. Pour half of your water on the asparagus and toss it to moisten them.

Mix your egg with the remaining water. Coat them in the coconut flour. Then dip them in the egg mixture. Then in the panko. Season them with salt and pepper.

Bake them in the oven at 350F until they are golden. Mine took about 16 minutes.
