Cucumber Kimchi

 1 lb. baby cucumbers
 1 tsp. salt
 2 tsp. minced garlic
 1 tsp. minced ginger
 ½ cup sliced green onions
 2 tbsp. rice wine vinegar
 2 tbsp. Korean chili powder
 2 packets of Splenda
 ½ tsp. fish sauce
 1 tbsp. sesame seeds

Slice your cucumbers to the desired size. Add the salt to them and let them sit about 20 minutes. Drain the liquid.

Add your sliced your green onions.

Use the remaining ingredients to make a sauce. Toss well. Allow them to marinate at least 30 minutes before eating.
