 1 large english cucumber
 8 oz tuna drained
 ¼ cup diced red onion
 ¼ cup diced red bell pepper
 1 tsp dijon mustard
 4 tbsp plain greek yogurt
 1 tsp lemon juice
 1 tbsp chopped parsley

Use a vegetable peeler or mandolin slicer and slice the cucumber into large ribbons.

Mix the remaining ingredients and wrap them up with the cucumber.
