Dirty Cauliflower Rice

 1 lb ground turkey
 2 tbsp olive oil
 1 small onion, diced
 1 green bell pepper, diced
 2 stalks celery, diced
 3 garlic cloves, crushed
 2 tsp cajun seasoning
 16 oz cauliflower rice
 ¾ tsp salt
 ¼ tsp red pepper flakes
 green onions for garnish

Sauté ground turkey in a large skillet over medium heat until cooked through. Remove ground meat from the skillet and drain.

Add 1 tablespoon olive oil to the skillet with onion, bell pepper, and celery. Sauté over medium heat until vegetables are tender.

Add crushed garlic and continue sautéing for 1 minute.

Reduce heat to medium-low and add remaining oil, riced cauliflower, seasoning, salt, red pepper flakes, and meat. Stir, cover skillet, and cook for 7-8 minutes, or until rice is tender.

Serve cauliflower dirty rice with green onions.
