Fluffy Omelet

 2 eggs
 1 oz. shredded cheese
 2 oz. cooked turkey sausage
 1 tbsp. sliced green onions
 salt and pepper

Separate your egg yolks from whites. Beat your whites until they form stiff peaks.

Gently fold your yolks into the whites. Spray a non-stick pan with cooking spray.

Add the eggs. Spread them out, season, and cook until the edges are done and it is firm enough to flip.

Flip the omelet and add the other ingredients on one side. Fold and cook until the eggs are done.
