French Onion Stuffed Chicken

 1 large onion
 1 tsp olive oil
 1 tsp chopped fresh thyme
 2 cloves minced garlic
 ½ cup beef stock
 4 oz shredded gruyere cheese
 2 large chicken breasts
 ½ tsp salt
 ½ tsp pepper
 1 tbsp beef bouillon powder

Butterfly your chicken breast and season well with the beef boullion powder.

Saute your onions with the garlic, thyme, stock, salt and pepper.

Fill the center of your chicken with the onions and cheese.

Sear the outside of the chicken well. Bake in the oven at 350F until the chicken is cooked through (165F). Serve with additional onions on top if you would like.
