Garlic Coconut Shrimp Stew

 1 lb. cleaned shrimp
 1 can unsweetened coconut milk
 1 can fire roasted tomatoes
 ½ onion, diced
 2 tbsp. minced garlis
 1 tbsp. olive oil
 salt and pepper
 2 cups prepared cauliflower rice
 2 tbsp. chopped cilantro

Saute your garlic and onions in the olive oil until soft.

Add the canned tomatoes and cook until they start to break up. Stir in coconut milk. Allow to simmer.

Salt and Pepper to taste. Add shrimp and cook just until done.

Serve over the cauliflower rice and garnish with cilantro.
