Cut all of your veggies into 1/2 pieces.
Toss with olive oil, salt and pepper.
Roast in 9x13 pan in the oven at 350f for 15 minutes or until soft.
Brown your sausage and add to the veggies.
Beat your eggs well. Pour them over the veggies and sausage.
Bake at 350F for 18 to 22 minutes or until eggs are set
