Preheat your oven to 350F.
Blanch your green beans in salted water for about 8 minutes.
Add your mushrooms, cauliflower, stock, garlic, diced onion, salt and pepper to a pan and saute with a lid until all veggies are very soft.
Blend them in a blender.
Cook the sauce until it is thick and creamy.
Stir greek yogurt into the sauce.
Check to see if it needs more salt or pepper.
Toss green beans into the sauce.
Top with french fried onions and bake for 15 to 20 minutes.
