 2 cups baby kale
 1 tbsp lemon juice
 1 tsp olive oil
 salt and pepper
 4 oz shredded chicken (I used rotisserie chicken)
 1 oz thinly sliced apple
 ½ oz cheddar
 1 tbsp toasted pumpkin seeds

Add your lemon juice, salt, pepper and olive oil to your kale.

Gently massage the kale until it gets softer.

Top with remaining ingredients and enjoy.
