Lemon Coconut Cookies

 1 cup no sugar added white chocolate chips (melted)
 1 tsp. coconut oil
 Juice and zest of 1 lemon
 1 scoop vanilla protein powder
 1 cup unsweetened coconut flakes

Add your chocolate and coconut oil to the microwave in 30 second intervals. Stir in between each until melted.

Add the remaining ingredients and stir well.

Drop into rounds on parchment paper and allow to set up.
