Spray on non-stick cookie sheet with pam. Beat the eggs with the salt and pepper until very well mixed.
Pour into the shallow cookie sheet. Bake at 350F for 12 to 16 minutes or until the egg is cooked through.
Remove it from the oven and allow to cool about 10 minutes.
Add ham, cheese and veggies. Roll gently. Slice and serve.
