Mexican Street Corn Chicken Salad

 2 chicken breast (cooked and shredded)
 2 ears of corn (cooked and cut off cob)
 ¼ cup crumbled cotija cheese
 ¼ cup fresh cilantro (chopped)
 ½ tsp. Tajin (plus some for garnish)
 3 tbsp. light mayo
 ¼ cup plain Greek yogurt
 Juice of 1 lime

Mix your mayo, lime juice, yogurt and Tajin together to make a dressing.

Toss the chicken and corn with the dressing. Add half of your cotija cheese and half of your cilantro. Mix again.

Garnish the top with the remaining cheese, cilantro and a sprinkle of Tajin.
