Mexican Turkey Meatloaf

 1.50 lbs. lean ground turkey or beef
 1 cup crushed tortilla chips
 1 small onion, diced
 1 bell pepper, diced
 2 eggs
 1 oz. taco seasoning
 ¼ cup taco sauce or salsa
 1 tsp cilantro
 ½ cup shredded pepper jack or cheddar cheese
 sliced green onions for garnish

Preheat the oven to 350F. Thoroughly combine beef, cilantro, tortilla chips, pepper Jack cheese, onion, pepper, and taco seasoning in a bowl. Whisk eggs and taco sauce together in a separate bowl.

Add to meat mixture and stir until well combined. Form the mixture into loaf shape on a lined pan. Bake in the preheated oven until cooked through and browned on top, 45 to 60 minutes.

Add additional sauce and cheese to the top and cook for about 5 more minutes if you would like. Garnish with sliced green onions.
