 1 oz diced ham
 1 oz cheddar cheese
 1/8 cup diced red onion
 1/8 cup diced red pepper
 pinch of salt and pepper

Add your ham, cheese and veggies to a coffee mug that you have sprayed with non-stick cooking spray.

Beat your eggs well and pour them over the veggie mixture.

Stir it all together.

Microwave on high for 90 seconds.

If the mixture is not set microwave in 20 second intervals until it is.
