Mini Spinach Dips

Yields4 Servings

 1 cup cottage cheese
 1 cup cooked spinach (with all of the liquid squeezed out)
 ½ tsp. black pepper
 ½ tsp. garlic powder
 1 chopped Roma tomato
 ¼ cup Monterey jack cheese
 1 diced onion
 1 diced red bell pepper
 1 tsp. olive oil

Sauté your onion and pepper in the olive oil until soft. Spray 4 small ramekins with non-stick cooking spray. 

 

Eat with raw veggies or protein chips.

Mix all of your ingredients together and split between the 4 ramekins.

Bake at 350F until golden and bubbly. Mine took 18 minutes.  Serve with veggies or protein chips.
