 8 oz. cottage cheese
 4 oz. egg whites
 8 low carb chocolate sandwich cookies (chopped)
 ½ cup Splenda
 1 tsp. vanilla

Blend your cottage cheese until it is very smooth. Add your egg whites, Splenda and vanilla.

Fold in about 2/3 of your chopped cookies.

Add your mixture to 6 lined muffin tins and top with remaining cookie pieces.

Bake at 350F for 13 to 15 minutes or until the cheesecakes are set.
