Peruvian Cheese Breads

 2 eggs
  cup plain Greek yogurt
 2 tbsp. olive oil
 1 ⅓ cup of milk
 3 cups tapioca flour or low carb flour alternative
 1 cup shredded cheese
 2 tsp. garlic powder
 1 tsp. salt

Preheat the oven to 400°F. Spray a non-stick muffin tin with cooking spray.

Put all ingredients into a blender and pulse until smooth. You may need to use a spatula to scrape down the sides of the blender so that everything gets blended well.

Pour the batter into the prepared muffin tins (12).

Bake at 400°F in the oven for 15-20 minutes until they have rose and are browned.

Remove from the oven and let cool on a rack for a few minutes.
