Prep your chicken by removing the back bone and season it with garlic, salt and pepper.
Roast at 375F just until your chicken is done (and internal temperature of 160F). My small chicken took 50 minutes.
Blend off of your remaining ingredients until it is smooth. Serve your cold sauce with your warm chicken.
