 2 cups egg whites
 12 baby tomatoes
 1 cup 1 cup spinach
 ½ cup thinly sliced red onions
 3 tbsp basil pesto
 ½ tsp salt
 ½ tsp pepper

Spray a muffin tin well with non-stick cooking spray.

Tear your spinach into small pieces and add to each well.

Add tomatoes and red onion.

Beat your egg whites well with the salt, pepper and pest.

Pour into each well. Bake at 350F for 20 minutes or until the centers are set.
