Pesto Pepperoni Chicken

 4 thin chicken breasts (about 4 oz each)
 4 oz. turkey pepperoni
 1 cup low sugar marinara
 4 oz. mozzarella cheese
 2 tbsp. pesto
 1 tsp. paprika
 salt and pepper
 parsley for garnish

Butterfly your chicken breast and season them with salt and pepper. Rub the chicken with the pesto and paprika.

Add your pepperoni and cheese to the center of the chicken and close it with a toothpick.

Layer your marinara in the bottom of the casserole dish, then add chicken.

Bake at 350F for 30 to 35 minutes or until the chicken is done. Garnish with parsley and serve.
