Pizza Chicken

 2 large chicken breasts
 ½ cup low sugar marinara
 ½ cup shredded mozzarella
 ½ bell pepper, sliced thin
 ½ onion, sliced thin
 2 oz sliced mushrooms
 salt and pepper

Slice each chicken breast long ways, making 2 thin cutlets.

Pound those cutlets out to make them even thinner.

Season them with salt and pepper.

Sauté each one in a pan with some non-stick cooking spray.

Add the sauce, cheese and pizza toppings to the chicken and bake at 350F for about 10 minutes.
