Add your stock, soy, mirin, ginger and chili's to a pan.
Bring it to a boil then add salmon, cover and simmer 5 to 7 minutes. Remove from cooking liquid and let rest.
Prepare your cauliflower rice as per the directions on the package. Add pomegranate seeds, lime juice, salt and pepper.
Serve your salmon on the rice and garnish with fresh cilantro and more lime juice if desired.
